(AP) If you’ve ever had the pleasure of trying the best salmon poke in the world, you’re probably in luck: the Whitefish salmon poke has been invented in Maryland.
The Maryland Department of Agriculture says the company behind the delicacy is “a leading provider of fish products to the U.S. market.”
The Maryland Fish and Game Department says it was “excited to work with Whitefish” to bring its product to the state, where it will likely be used by the food industry.
Maryland is one of several states to have a commercial market for Whitefish products, which have been gaining popularity in recent years.
A popular restaurant in Washington, D.C., serves them at a $4.99 price point.
